Keep the puff pastry cold. Puff pastry creates its beautiful flaky layers when cold pastry meets a hot oven. If the pastry becomes very soft while you’re assembling the bites, place the muffin pan in the refrigerator for about 10 minutes before baking.
There is no need to remove the rind from the Brie. It is completely edible and actually helps keep the little pieces of cheese together as they melt.
Whole-berry cranberry sauce or a good cranberry preserve gives these the prettiest presentation. I like seeing little pieces of cranberry rather than using a completely smooth jelly.
You can assemble the bites several hours before guests arrive. Cover the muffin pan and refrigerate it, then bake just before serving.
Allow them to rest for a few minutes before moving them to your serving platter. The Brie will be very hot straight from the oven.
