There is no need to remove the rind from the Brie. It is completely edible and actually helps keep the little pieces of cheese together as they melt.
Whole-berry cranberry sauce or a good cranberry preserve gives these the prettiest presentation. I like seeing little pieces of cranberry rather than using a completely smooth jelly.
You can assemble the bites several hours before guests arrive. Cover the muffin pan and refrigerate it, then bake just before serving.

1 cup shredded mozzarella cheese, divided
½ cup freshly grated Parmesan cheese
2 garlic cloves, minced
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Pinch of red pepper flakes, optional
Chopped fresh parsley or chives for garnish, optional
Toasted baguette slices, crostini, pita chips, or crackers for serving
Directions
Preheat the oven to 375°F.
Place the thawed spinach in a clean kitchen towel and squeeze firmly to remove as much moisture as possible. This keeps the finished dip creamy rather than watery.
In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, garlic, salt, black pepper, and red pepper flakes. Stir until smooth.
