Hot Spinach Artichoke Dip

Some of the best entertaining recipes are the ones that feel special without requiring hours in the kitchen. This Hot Spinach Artichoke Dip has become one of my favorite appetizers because it is warm, creamy, and easy to prepare before guests arrive.

The combination of tender artichokes, spinach, cream cheese, Parmesan, and melted mozzarella creates the kind of comforting appetizer people naturally gather around. I like to serve it in a simple white baking dish placed in the center of a polished silver tray, surrounded by toasted baguette slices and crisp crackers.

It works just as beautifully for a casual family evening as it does for cocktails, holidays, or a more formal dinner party. Best of all, most of the preparation can be done ahead of time, leaving only the baking for just before serving.

Ingredients

  • 1 10-ounce package frozen chopped spinach, thawed
  • 1 14-ounce can artichoke hearts, drained and chopped
  • 1 8-ounce package cream cheese, softened
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 cup shredded mozzarella cheese, divided
  • ½ cup freshly grated Parmesan cheese
  • 2 garlic cloves, minced
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Pinch of red pepper flakes, optional
  • Chopped fresh parsley or chives for garnish, optional
  • Toasted baguette slices, crostini, pita chips, or crackers for serving

Directions

  1. Preheat the oven to 375°F.
  2. Place the thawed spinach in a clean kitchen towel and squeeze firmly to remove as much moisture as possible. This keeps the finished dip creamy rather than watery.
  3. In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, garlic, salt, black pepper, and red pepper flakes. Stir until smooth.
  4. Fold in the chopped artichoke hearts, spinach, ½ cup of the mozzarella, and all of the Parmesan cheese.
  5. Spoon the mixture into a small oven-safe baking dish and smooth the top.
  6. Sprinkle the remaining ½ cup mozzarella evenly over the dip.
  7. Bake for 20 to 25 minutes, until the center is hot and the cheese is melted and lightly golden.
  8. Garnish with chopped parsley or chives, if desired.
  9. Place the baking dish in the center of a round silver serving tray and arrange toasted baguette slices and crackers around it. Serve warm.

Caroline’s Entertaining Notes

The dip can be assembled earlier in the day, covered, and refrigerated until you are ready to bake it. Allow the cold dish to sit at room temperature while the oven heats, then add several minutes to the baking time if needed.

For the prettiest presentation, arrange the bread and crackers after the hot baking dish has been placed on the tray. This prevents crumbs from falling underneath the dish and keeps the platter looking polished.

A mixture of crostini and neutral crackers gives guests different textures without competing with the flavor of the dip.
